Compete Kitchen: 5 Minute Dorm Room Breakfast

This was my go-to breakfast before 8:00AM classes. I made the whole thing in my dorm room and saved a ton of time. It also turned out to be so delicious that I frequently still make this breakfast, even when I have access to a full kitchen.

Supplies:

  • Tupperware
  • Microwave

Ingredients:

  • 4 hard boiled eggs (I would steal these from my dining hall and keep containers full of boiled eggs in my fridge)
  • 1 cup of spinach
  • 1 sweet potato
  • 1 avocado
  • 2 tbsp of kerrygold butter
  • Salt
  • Pepper
  • Garlic powder
  • Hot sauce

Steps:

  1. Poke holes in sweet potato, cover in moist paper towel, and place in microwave for 5-6 minutes
  2. Chop 4 eggs in a tupperware container into small cubes
  3. Add 1 tbsp of grass-fed butter
  4. Add salt, pepper, hot sauce and garlic powder to the eggs
  5. Microwave for 30 seconds
  6. Lay out a bed of spinach on a plate
  7. Open avocado, remove pit, and cut a grid pattern using a butter knife. Then remove the avocado from the shell onto the bed of spinach
  8. Pour the eggs on top of the spinach
  9. Cut open sweet potato, add 1 tbsp of butter and 1 turn of pepper
